Zucchini Bread

INGREDIENTS:

-2 cups of almond flour
-½ tbsp. of sea salt
-1 tbsp. Ground cinnamon
-¼ cup Olive Oil
-¼ cup Agave Nectar or Maple Syrup
-2 large eggs
-½ cups pecan coarsely chopped
-½ cup dried currants
-1 cups grated zucchini


DIRECTIONS:

-Preheat oven to 350 degrees
-Mix all ingredients together
-Pour into greased pan
- Cook for 40 minutes and check with a knife or toothpick. Once the knife/toothpick comes out clean it is cooked.
- Store in fridge for up to one week or slice and freeze for up to three months.
