
Lemon Ginger Quinoa
INGREDIENTS:
-1 tbsp. Extra virgin olive oil
-1 small carrot
-1-inch piece of ginger
-1 small onion
-2 large garlic cloves
-Broccoli, kale, spinach, or any other vegetable that you have a home you can add to the mix.
-2 cups quinoa
-3.5 cups water
-½ tbsp. sea salt
-1 tbsp. black pepper
-½ Lemon juice
DIRECTIONS:
-Add extra virgin in large saucepan over medium heat.
-When the pan is hot add carrots, ginger, onion, garlic and any other vegetables you have at home and sauté for about 2 to 3 minutes.
-Add the quinoa and sauté for one minute
-Add water, sea salt, black pepper, ginger and cover for 20 minutes
-Put the lemon juice and let it sit to absorb the lemon juice.
