
Golden Beets and New Potatoes
This golden beet and new potato recipe is the perfect “Goldilocks” meal for Late Summer.
INGREDIENTS:
-4 medium or 6 small golden beets
-1 lbs new potatoes
-1 tsp herbs de province
-1 tsp coconut oil
-Salt and pepper to taste
DRESSING INGREDIENTS:
Balsamic Dressing
-1 cup EVOO
-1/3 cup balsamic vinegar
-1 tsp Dijon mustard
-Salt and a pepper to taste.
Add all ingredients to bowl and whip with fork until all ingredients are fully blended. Store in an airtight container at room temperature.
DIRECTIONS:
-Preheat oven to 400 degrees.
-Thoroughly clean sweet potatoes, leave the skin on as it is packed full of vitamins.
-Peel Beets
-Chop sweet potatoes and beets into bite size pieces
-In a bowl toss sweet potatoes, beets, herbs, salt, pepper, and coconut oil.
-Once tossed, place on cookie sheet.
-Bake for 20 minutes. After 20 minutes, carefully mix around
-Bake for another 20-25 minutes or until slightly browned
Taste great both warm and cold!
