
Salmon and Baby Kale Salad with a Cilantro Lime Dressing
This summer time baby kale and salmon salad with a cilantro lime dressing recipe that is full of cooling ingredients that makes for a great summer lunch or dinner.
INGREDIENTS:
Makes 2 servings
-2 4oz fillets of salmon or 8oz smoked salmon
-2 cups baby kale
Feel free to top with your favorite summer fruits and vegetables like:
-Cucumber
-Watermelon
-Celery
-Tomatoes
-Berries
-Grapes
-Zucchini
DRESSING INGREDIENTS:
Makes 4 servings
-2 cups cilantro
-1/4 cup extra virgin olive oil
-1/4 cup lime juice
-1/2 tsp salt
-Pepper to taste
DIRECTIONS:
-For dressing: add all ingredients to the blender and blend.
-In a large bowl add baby kale and topping of your choice
-Top with cooled roasted or smoked salmon
- Add 2 tablespoons for dressing per serving of salad
-Enjoy!
To Roast Salmon
-Set oven to broil
-Top salmon with pepper
-Broil salmon for 5-7 minutes
-Let cool for a few minutes before adding to salad avoid wilting the baby kale
