Easy Crockpot Lima Bean and Turkey Soup

We are living through an incredibly stressful time, and for many of us, sleeping has been tough. This easy crockpot lima bean and turkey soup that is a great natural anxiety reducing sleep aid!

INGREDIENTS:

-2 Cups frozen lima beans
-2 Boneless skinless turkey breasts
-1 Large yellow onion
-2 Cloves of garlic
-1 tbsp fresh sage *
-2 tbsp fresh parsley*
-1 tbsp fresh thyme *
-Salt and pepper (to taste)
-2 Cups vegetable stock (low sodium)
-1.5 Cups of water
For a vegetarian option, replace the turkey breast with 1 block extra firm tofu cut into cubes.


DIRECTIONS:

-Diced onion
-Clean and mince sage, garlic, thyme, and parsley
-Add all ingredients to crockpot
-Cover and cook on low heat for 6 hours
-After 6 hours pull out turkey and shred it with two forks
-Return shredded turkey to crockpot and serve

This meal freezes great, so store some in the freezer for an easy and relaxing anxiety reducing dinner.

*Dried sage, parsley, and thyme can be substituted, but fresh is better. If you are using dried herbs use 1 teaspoon sage and thyme and 1 tablespoon parsley.
